Ingredients:
- 1/2 cup rolled oats
- 1/2 cup almond milk (or milk of your choice)
- 1/2 ripened banana
- 1 tsp baking powder
- 1/2 tsp cinnamon
- Dash of vanilla extract
- Dark chocolate chips

Step One: Preheat the oven to 350°F. Line six muffin tins with cupcake liners, or spray with non-stick baking spray.
Step Two: Using a fork or a food processor, smash the banana until there are no lumps.
Step Three: In a medium-sized bowl, add the oats, almond milk, ripened banana, baking powder, cinnamon and vanilla. Mix until well combined. Fold in the dark chocolate chips.
Step Four: Fill the muffin tins about 2/3 of the way. Place in the oven. Bake for 25 minutes, or until golden brown on the top.
Step Five: Remove from the oven, let cool, and enjoy! Top with nut butter or honey for an extra sweet kick!
